Tasty Tuesday: Yakitori

TASTY TUESDAY, JANUARY 25, 2022 — YAKITORI

Ever wonder what new to do with chicken?  This is not only an easy dish but can be flavored your way and is super delicious. When I was catering it was one of the most requested dishes for buffet serving. I learned it when we lived in Japan! Served with steamed or boiled rice, it’s a great meal. Fresh or steamed vegetables would make a great side as well.

YAKITORI (GRILLED CHICKEN)

Buy enough chicken for the number you are feeding – chicken breasts or boneless chicken thighs

Cut in pieces to fit on a skewer (bamboo or metal skewers)

For 2 chicken breasts or 4 thighs combine —

2 Tablespoons soy sauce

1 ½ Tablespoons granulated sugar

2 Tablespoons water

Optional: Ground ginger, garlic powder, red pepper flakes . . . flavors you enjoy!

Let marinate ½ hour or more.  The longer, the stronger flavors.

Remove from marinade and skewer on to the skewers (or you can just grill them without the skewer is ok)

Grill or broil for 7-8 minutes, turn halfway through.

Serve warm.

Chef’s Notes:

Can be served as a meal or as an appetizer or snack.

You could serve with a sauce for dipping, but we have always liked them as is – the soy marinade is delicious. And it helps to tenderize the chicken.

Serving with skewered raw vegetables and dip is a nice addition – different textures and flavors.

The rice is delicious to serve alongside.
