Recipe for ROASTED CAULIFLOWER AND CARROTS
EQUIPMENT NEEDED
Cutting board, knife, and baking sheet(s).

INGREDIENTS
- 1 medium head cauliflower, chopped in 1-inch pieces
- 1 lb (16 oz) carrots, chopped in 1-inch pieces
- 2 tbsp olive oil
- 1/2 tsp garlic salt, (or 1/2 tsp garlic powder and 1/4 tsp salt)
- ground pepper, to taste
- 2 tbsp fresh parsley, chopped
METHOD OF PREPARATION
- Pre-heat oven to 400°F. Line a baking sheet with parchment paper.
- Place cauliflower and carrots on the baking sheet. Drizzle olive oil onto vegetables and season with garlic salt and pepper. Toss vegetables to coat. Spread vegetables evenly in a single layer making sure not to overlap them. Use additional baking sheets if needed.
- Roast for 20-25 minutes. Flip vegetables halfway through to ensure even cooking.
- Remove from oven and place vegetables in a serving dish. Sprinkle with parsley. Enjoy!
