Tasty Tuesday: National Oatmeal Muffin Day

TASTY TUESDAY, DECEMBER 14, 2021 – NATIONAL OATMEAL MUFFIN DAY

National Oatmeal Muffin Day is coming up on Sunday, December 19th! Oatmeal Muffins have never been on my “Favorite Foods” list, but I have to say – THESE ARE DELICIOUS! They are DATE, WALNUT OATMEAL MUFFINS.I have found they are much better, in my opinion, once they have cooled, not hot from the oven as many baked goods I enjoy.

These are wonderful, filling, and can be made as mini muffins, regular sized muffins, or the supersized muffins, which I made today!  These are now part of my every day and special muffin recipes, and I WILL make them time and time again!  Super easy to make. This recipe is from my Aunt Margie Bosley who loved them and submitted the recipe for one of my Bosley Cookbooks. Hope you will try.

OATMEAL DATE WALNUT MUFFINS

Ingredients

1 cup oats (I used Quick oatmeal)

1 cup all-purpose flour

1 cup buttermilk (I used lemon juice and whole milk)

1 egg

1 teaspoon baking powder

½ teaspoon salt

½ teaspoon baking soda

½ cup vegetable oil

½ cup chopped dates

½ cup chopped nuts

Instructions

Mix all ingredients together and spoon into greased muffin tins (or use muffin papers or reusable muffin forms.)

Bake in a preheated 400 degree F. oven 15-20 minutes or until just done – but DO NOT OVERBAKE. Adjust the bake time for the size of muffins you are baking.
