Tasty Tuesday: New Year’s Bonus Recipes

NEW YEAR’S BONUS TASTY TUESDAY, DECEMBER 31, 2021 – HOMEMADE CHIPS AND SALSA

Here we are – at the end of another year! I want to thank you for allowing me to be a part of the Tasty Tuesday blogs. I have sincerely enjoyed sharing my recipes and stories with you over the past year and I look forward to continuing in the new year. So, as 2021 comes to a close, I’d love to wish you all a very happy and blessed New Year 2022!

Additionally, I would like to share a bonus recipe with you for your New Year’s celebrations!

HOMEMADE CHIPS

This recipe is simple and delicious! They are also FUN to make and FUN to eat! Additionally, this recipe is not fried. Please enjoy!

Ingredients

1 package corn tortillas

1 package flour tortillas

Salt

Spices if you desire, your choice

Instructions

  1. Cut tortillas in bite size triangles or squares. Place on a baking sheet and bake at 400 degree F. for about 10 minutes, turning once. Check for crispness. If not quite crisp enough put them back in the oven for 2-3 minutes at a time, checking again for crispness. You do not want to burn the chips.
  2. As soon as they come out of the oven sprinkle with salt and other seasonings you choose. Let cool slightly before serving.

HOMEMADE SALSA

This salsa recipe was shared with me by a neighbor – about 25 years ago! You may customize the ingredients based on what you like or do not like – to suit your tastes, but I think this is just about perfect for me!  

Ingredients

1 can black beans, drained and rinsed

1 14-ounce can whole kernel corn, drained

½ cup chopped green onion

1 large red tomato chopped

1 can Rotel tomatoes (For no spice, use non-spiced tomatoes. For extra spice, use Hot Rotel tomatoes)

1 orange bell pepper, chopped

1 clove garlic, minced

1 avocado, chopped

1 bunch fresh cilantro, chopped

Instructions

  1. Combine beans, corn, Rotel tomatoes, pepper, cilantro, green onions, garlic together and top with dressing below.
  2. Marinate 5 hours or overnight. Add fresh tomato and avocado just before serving.

DRESSING

½ cup light olive oil

¼ cup red wine vinegar

½ teaspoon salt

Hot pepper sauce to taste if desired
